On October 29, we had the special opportunity to experience the kitchen of Säntisbahn AG up close. High up on the Säntis, we were able to interview Martin Koch, the Executive Chef, and his team. A big thank you goes to Vanessa Höft-Kesseli from the gastronomy trade company Kesseli AG, who organized the appointment and made the shoot possible.
With a whole range of film equipment, we took the gondola to the summit, where we immediately immersed ourselves in the chefs’ daily routine. It was fascinating to watch the professionals over their shoulders as they planned the day’s processes. Efficiency and clear processes are crucial here to meet the special requirements on the mountain.
One of the biggest challenges is the dependence on weather. Depending on the weather conditions, Martin Koch and his team must react spontaneously and either adjust quantities or create completely different menus. This flexibility would hardly be possible without reliable suppliers, who mainly come from the region.
